Ever since I started my journey to a better and healthier lifestyle, I have truly been enjoying preparing healthy meals during the week, which is really hard to do during the holidays! However, whether it is for breakfast, lunch or dinner, I am always looking forward to preparing meals and making them healthy and tasty. Remember that eating healthy does not mean boring and bland food, you can make it taste delicious and look amazing and appealing! Its all about adding the right flavors and being colorful with your food!
So I recreated this healthy lunch tuna salad (this is an old picture) and I wanted to share it here with everyone. It is so easy and simple, but yet colorful and delicious!
- One can of chunky light tuna in (in water)
- Butter lettuce
- 1/2 Yellow onion
- 1/2 Roma tomato
- 1/2 Yellow bell pepper
- 1/3 cup of shredded carrots
- chopped parsley (optional)
Now for the fun part, wash your lettuce; cut them as small or big as you want and place it on a plate. Chop the tomato, yellow bell pepper and yellow onion. Add this to the lettuce, along with the shredded carrots. Add the tuna (make sure is drained) to the center and the chopped parsley to garnish!
I made my own simple vinaigrette with just lime juice, olive oil and salt&pepper just to make it healthier, but feel free to use whatever you have.
