Open Fried Egg & Mushroom Sandwich
I have been enjoying eating eggs in the morning lately and cooking my eggs in different ways to keep it fun and interesting (like I said on my last post, I’m not a breakfast person). So today I woke up early and saw the mushrooms in the fridge and I immediately knew what I wanted to make for breakfast, an open fried egg sandwich with mushrooms and saute onions and tomatoes.
This is what you need for this recipe which is super simple (serves 2)
- 4 medium size eggs (2 per person)
- 1 cup of Roma tomatoes (diced)
- 1/3 cup of yellow onions (diced)
- 4 slices of bread (I use thin cut slice oats organic bread)
- Unsalted butter
- Parsely or Cilantro (optional)
- White mushrooms ( about 4)
- Salt&black pepper (to taste)
In a non-stick sauce pan on medium high, add a Tbs of unsalted butter. Once the butter has melted, add the mushrooms and season it with salt and black pepper (remember to always season your food as you go). When mushrooms achieve a golden brown color, turn the heat on low to prevent them from getting burned. When they are finished take them out and set it aside.
Lets work on our fried eggs and try to be patient with this step, In a non stick sauce pan on medium low heat, add a tsp of unsalted butter. after butter has melted, remove pan from the heat, add 2 eggs and return to heat. This is the part when your patience is required, only flip your eggs when they are ready to be flipped. Go for your desired texture; I went for an under hard fried egg. Once the egg is ready take it out and place it on the toasted slice of bread.
For the onions and tomatoes, I chose to cook them in a different pan ( however, you can cook them with the mushrooms for extra flavor). In another non stick sauce pan on low heat, add 1 1/2 tsp of unsalted butter. Once the butter has melted, proceed to add the onions and cook until they look translucent. Add the diced tomatoes, and saute lightly (I do not like mushy tomatoes on my sandwiches) so cook for about 2 minutes.
Now for the fun part, we get to assemble our sandwich. Add the mushrooms on top of the fried egg, followed by the sauteed onions and tomatoes. Remember to add salt and black pepper ( little hot sauce would also make this very yummy!) and to top it off, add the chopped parsley or cilantro to garnish. There you have it, a delicious open faced sandwich. Enjoy!
