Garlic and Lime Chicken Thighs
Summer is the time of the year when people like to spend more time eating out. The weather is gorgeous outside (at least most of the time) and there are lots of activities and places to go. I mean, no one wants to spend hours cooking at home! I personally enjoy cooking food that are super easy to make, that does not require a lot of time or preparation and that does not make my apartment feel like a sauna!
A few days ago, I decided to make a quick, tasty and easy meal. The star of my dish, were these delicious Garlic and Lime Chicken Thighs. I have never been a fan of chicken thighs, but I have been cooking them and coming up with different recipes a lot more lately. So here is what you need for this recipe:
- 1/2 tbs coconut oil
- boneless skinless chicken thighs
- 3 garlic cloves (minced)
- 1/2 yellow onion
- 1 lime
- 1 tbs dried oregano
- 1/4 cup of green onions
- Salt & black pepper
Season the chicken thighs with salt & pepper, add the juice of half a lime, add garlic, yellow onions and the dried oregano. Mix well, make sure all the chicken is coated with all the ingredients. Placed the chicken thighs in a skillet with 1/2 tbs of coconut oil in medium heat. Get a nice sear on both sides of the chicken ( there will be a little water from the juices in the chicken and the lime, just let it evaporate).
Once the chicken has a nice sear on it, cut the other half of the lime in slices and place on top of the chicken. Cover the skillet with tin foil and place in the oven at 350 degrees for about 15 minutes. Once chicken is cooked, remove the tin foil and put it back in the oven on broil for about 5 minutes. I personally like my meat a little on the darker side, but you choose if you would like to keep it longer or less time. Once is done, just serve with a simple salad or over wild rice.
