I am not a big fan of breakfast in the morning ( I know, it’s horrible!) but I am working on it. I always try to make things that are easy and don’t require a lot of time. That’s why this is my number one choice for breakfast in the morning, a delicious and easy to make Egg Crostini.
It is the easiest thing to make in the morning when you just want to fix yourself a quick breakfast and do not have a lot of time.
This what you need
- French baguette
- 2 eggs
- 1/3 cup of diced onions (the quantity of this depends on how much or little you’d like)
- one small roma tomato (diced)
- unsalted butter
- one teaspoon of parsley
- salt & black pepper
Now for the fun part, in a non stick pan on low heat, add about a teaspoon of unsalted butter. While the butter melting, in a bowl beat up the two eggs. Add the onions to the pan and let it cook until they achieve a translucent color. Add the eggs and keep cooking it on low. (keep steering the eggs with a spatula, since we are going for scrambled eggs). When it looks like the eggs are about to be done, add the tomatoes. I do not know about you ladies, but I like my tomatoes to be on the firm side, so they actually have a bite to them. Once the eggs are cooked, add salt a black pepper to taste.
Moving on to the baguette, preheat the oven. Proceed to cut four small pieces of bread on the bias and add butter. Once the oven is preheated, turn it to broil and add your pieces of bread. Let the bread toast until they start looking golden brown (I like them crunchy). When they are done, take them out, add the scrambled eggs on top of the pieces of bread and garnish with parsley. Voila! A delicious Egg Crostini. Enjoy!
