Chipotle Spicy Chicken
Lately, I have been struggling with eating healthy and preparing healthy meals. It is hard to stay on track and eat clean everyday. Especially when you have a 3.5 month old baby that requires a lot of attention. However, today I decided it was the day to jump back on that bandwagon and start making good and healthy choices. I prepared a Chipotle Spicy Chicken & Veggies over a bed of kale. One word “Yumms!” This was ridiculously delicious!
The chicken had a perfect sear, It was juicy and perfectly cooked. The veggies had an amazing flavor and still had a little bit of that crunchiness. The Kale was just the perfect side to go with my chicken. Honestly, It doesn’t get any better than that when you want a quick and easy meal that is good for your body and mind!
- 2 medium size chicken breast sliced into cutlets.
- 1/2 an onion ( Julienne)
- 1/2 Green bell pepper (Julienne)
- Chipotle seasoning
- Salt &Pepper
- Olive oil & ACV
In a cast iron pan in medium high-heat, add 1tbs of olive oil and swirl the pan so is nicely covered. Season the chicken with salt, pepper and chipotle seasoning on both sides. Add as much or as little chipotle seasoning depending on the amount spiciness you would like.
Place the kale on a plate, slightly drizzled with olive oil and ACV (also you can substitute this with a little lemon juice) salt & pepper (to taste). Add the veggies and place the chicken cutlets on top. Now how delicious does that look?
